Step 1
Stir the paprika, cumin, salt, and pepper together in a small bowl to create your spice blend. Next, spread half of the sliced onions evenly across the bottom of a 10-inch skillet. Layer the potato slices on top, overlapping them if needed to cover the surface. Then add the carrots, zucchini, bell pepper, and tomatoes in layers, finishing with a sprinkle of garlic over the tomatoes. Arrange the turkey pieces on top, spacing them out evenly. Sprinkle the spice mix all over the turkey, add the remaining onion slices, and drizzle some vegetable oil over everything.

Cover the skillet and let it cook on medium-low heat for about 40 minutes, or until the turkey is cooked through and the onions on top are soft and translucent.
