Tips To Improve This Recipe
- Press the mixture firmly into the pan to help the bars hold together well.
- Chill the bars for at least an hour before cutting to prevent crumbling.
Step 1
Put the dates in a bowl and pouring just enough boiling water over them to cover. Let them soak for about 10 minutes, then drain and discard the water. Next, toss the oat flour, protein powder, and cocoa powder into a food processor and pulse until everything is mixed well. Add the soaked dates, half of the pecans, half of the coconut, vanilla, and a pinch of salt. Pulse again, adding a little water if needed, until the mixture comes together into a soft dough.
Step 2
Transfer the dough to a bowl and stir in the remaining pecans, coconut, and chocolate chips. Once everything is evenly combined, scoop the dough onto a sheet of parchment paper. Place another sheet on top and use a rolling pin to press it out to about half an inch thick. Pop it in the fridge for a couple of hours until it firms up. When it’s set, slice into 12 bars and enjoy!
