Directions
Lightly heat your oven to 350°F (175°C). In a large bowl, toss together the chicken, celery, almonds, bell pepper, onion, pimento, salt, lemon juice, and mayonnaise until everything is nicely combined. Transfer the mixture to a 1 1/2 quart casserole dish and spread it out evenly. Sprinkle the grated cheese over the top, then add a layer of crushed potato chips for a bit of crunch. Pop the dish into the oven and bake for about 25 minutes, or until the cheese is melted and bubbly. Let it cool for a few minutes before serving.
