Directions
Warm your oven to 325°F (165°C) and greasing two 8x4-inch loaf pans with butter. In a large bowl, mix together the whole wheat flour, flaxseed meal, wheat germ, baking soda, cinnamon, salt, and walnuts. In another bowl, beat the eggs and brown sugar with an electric mixer until the mixture is thick and pale, which should take about three minutes. Then, add the sunflower seed oil, walnut oil, and yogurt, mixing until everything is well combined. Stir in the mashed bananas and vanilla extract next. Pour the wet ingredients into the dry, stirring just enough to moisten everything—don’t overmix. Divide the batter evenly between your prepared pans and pop them in the oven. Bake for around 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean. Once done, let the loaves cool in the pans for about five minutes before transferring them to a wire rack to cool completely.
