- 6 ounces broccoli coleslaw mix
- 3 tablespoons very thinly sliced red onion
- 1 tablespoon olive oil
- ½ cup peanut sauce
- ½ cup shredded mozzarella cheese
- 2 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon chopped fresh mint

Step 1
Lightly heat your oven to 425°F (220°C). Line a baking sheet with parchment paper, then spread the broccoli slaw and red onion on it. Drizzle with a bit of olive oil and toss everything together so it’s well coated. Pop it in the oven for about 5 minutes, then take it out and set it aside—but keep the oven on.
Step 2
Take one pizza crust and spread half of the peanut sauce over it. Layer on half of the broccoli and onion mix, then half the chicken, and finish with half of the mozzarella cheese. Do the same with the second crust and the rest of the toppings.
Step 3
Place both pizzas directly on the oven rack and bake until the crust turns golden and crispy, which should take around 13 to 15 minutes. Once they’re out of the oven, scatter fresh basil, cilantro, and mint over the top for a bright, fresh finish. Enjoy!
