Lightly heat some oil in a cast iron skillet over medium heat. Meanwhile, bring a pot of water to a boil. In a bowl, pour the boiling water slowly into the cornmeal, stirring as you go until the mixture is smooth. Add a pinch of seasoned salt and give it a good mix.

Once your oil is hot, drop spoonfuls of the batter into the skillet. Let them fry until the edges turn golden brown, which should take about 5 minutes.
