Step 1
Whisk the ground turkey with water, liquid smoke, kosher salt, pink salt, pepper, onion powder, paprika, garlic powder, and sage in a big bowl. Stir everything together really well so the spices are evenly spread. Cover the bowl and pop it in the fridge for at least 8 hours, or overnight if you have time.
Step 2
When you’re ready, load the seasoned turkey into a jerky gun and squeeze out as many sticks as will fit on your dehydrator racks. Set your dehydrator to 155°F (68°C) and let the jerky dry for about 2 and a half hours.
Step 3
Once the time’s up, turn off the dehydrator and take the lid off. Let the jerky sit for another hour to finish drying and cool down before storing or snacking.
