Directions
Heat your oven to 350°F (175°C) and lightly grease a loaf pan with some cooking spray. Spread a thin layer of ketchup over the bottom of the pan, then sprinkle brown sugar on top of the ketchup. In a big bowl, mix together the ground beef, crackers, eggs, chopped onion, minced garlic, mustard, Worcestershire sauce, salt, and pepper until everything is well combined. Shape the mixture into a loaf and place it right on top of the ketchup and sugar in the pan. Lay the bacon strips over the top however you like—either in a lattice pattern or just overlapping. Pop the pan in the oven and bake for about an hour, or until the bacon is nicely cooked and the meatloaf juices run clear. Let it rest a few minutes before slicing and serving.
