- 1 bunch green onions, diced

- 2 jalapeno peppers, seeded and diced

- 1 cup Buffalo wing sauce, divided

Step 1
Lightly heat your oven to 350°F (175°C) and grease a loaf pan with cooking spray. Take the chicken sausage out of its casing and toss it into a big bowl along with the ground chicken. Chop up the green onions, celery, jalapenos, and white onion, then set aside about a quarter cup of each for topping later. Add the rest of the veggies to the meat mixture.
Step 2
Crumble in most of the blue cheese (save a little for sprinkling on top), then add the bread crumbs, half a cup of Buffalo wing sauce, eggs, onion powder, salt, and pepper. Mix everything together until it’s well combined and the veggies are evenly spread throughout. Press the mixture into your prepared loaf pan.
Step 3
Spread the remaining Buffalo wing sauce over the top, then sprinkle on the reserved veggies and the rest of the blue cheese. Pop the meatloaf in the oven and bake for about an hour and a half, or until the edges start to bubble and pull away from the pan. To be sure it’s done, check that the internal temperature hits 165°F (74°C). Let it rest a few minutes before slicing and serving.
