- Grapefruit Salsa:
- 2 cups grapefruit sections
- ¼ cup chopped red bell pepper
- ¼ cup chopped fresh cilantro
- 1 jalapeno pepper, diced

Directions
Gently heat your oven to 375 degrees Fahrenheit. In a small bowl, mix together paprika, onion and garlic powder, salt, oregano, thyme, black pepper, cayenne pepper, and brown sugar. Cut the salmon into four pieces and brush them lightly with oil. Then, rub the spice mixture all over the salmon, making sure each piece is well coated. Place the salmon on a baking tray with sides and pop it in the oven. Let it bake for about 15 to 20 minutes, until the fish flakes easily with a fork. While the salmon is cooking, roughly chop the grapefruit into bite-sized chunks and toss it with the other salsa ingredients. You can make the salsa ahead of time and keep it in the fridge until you’re ready to serve. When the salmon is done, spoon the sweet and spicy grapefruit salsa on top and enjoy!
