- 4 eggs
- 20 frozen bite-size potato nuggets (such as Tater Tots®)
- Country Gravy Mixture:
- 1 bunch green onions, white parts only, chopped
- 2 tablespoons butter
- 5 links frozen turkey sausage (such as Jimmy Dean®)
- 5 slices cooked bacon, cut into pieces
- 2 ½ cups milk
- 3 teaspoons ground black pepper
- 1 pinch cayenne pepper
- 4 (9 inch) whole wheat flour tortillas
- 8 thin slices Cheddar cheese

Step 1
Lightly heat your oven to 450°F (230°C). While that’s warming up, spray a large skillet with cooking spray and set it over medium-high heat. Whisk the eggs in a bowl until smooth, then pour them into the skillet. Stir occasionally as they cook, until they’re fully set—this should take about five minutes.
Step 2
Spread the potato nuggets out in a single layer on a baking sheet and pop them in the oven. Let them bake until they turn golden and crispy, around 17 to 19 minutes.
Step 3
While the potatoes are cooking, toss the green onions and butter into a cold saucepan. Take the sausage links out of their packaging, place them on a microwave-safe plate, cover with a paper towel, and microwave for about a minute until hot. Cut the sausages into small pieces and add them to the saucepan along with the bacon. Heat everything over medium, stirring every now and then until the butter melts.
Step 4
Slowly sprinkle in a few spoonfuls of flour, stirring constantly to form a paste. Then, gradually pour in the milk while stirring to avoid lumps. Turn the heat down to low and keep stirring until the gravy thickens, about five minutes. Season with black pepper and a pinch of cayenne for a little kick, then take the pan off the heat.
Step 5
To build the burritos, lay a tortilla flat on a microwave-safe plate and place two slices of cheddar cheese down the center. Spoon a quarter of the scrambled eggs over the cheese, then add about five crispy potato nuggets. Microwave for about 20 seconds to warm everything through. Drizzle some of the sausage gravy over the filling, microwave for another 20 to 30 seconds, and then roll up the tortilla while it’s still warm and flexible. Repeat with the remaining ingredients until all your burritos are ready to enjoy.
