Why This Recipe Is So Tasty
Cooking Tips
- Stir the granola halfway through baking to ensure even toasting.
- Let the granola cool completely before storing to keep it crispy.
Step 1
Lightly heat your oven to 325°F (165°C) and line two baking sheets with parchment paper. In a big bowl, mix together the oats, amaranth, sunflower seeds, pecans, walnuts, almonds, flaxseed meal, and ground chia seeds until everything is well combined.
Step 2
In a saucepan over medium heat, combine the honey, maple syrup, coconut oil, brown sugar, butter, vanilla extract, cinnamon, and salt. Stir constantly and bring the mixture to a boil, then let it cook for about a minute before taking it off the heat.
Step 3
Pour the warm syrupy mixture over the dry ingredients and stir everything together until the oats and nuts are nicely coated. Spread the granola evenly across the prepared baking sheets. Pop them in the oven and bake for about 20 minutes, giving the granola a good stir halfway through so it toasts evenly.
Step 4
Once out of the oven, let it cool for around 5 minutes, then transfer it to a large bowl. Finally, mix in the raisins, cherries, and blueberries so they’re evenly distributed throughout. Enjoy!
