Directions
Move your oven rack so it’s about 4 to 6 inches from the broiler, then go ahead and preheat the broiler. Lightly spray a broiler pan with cooking spray to keep the chicken from sticking. In a small bowl, mix together the butter, lemon juice, Italian seasoning, garlic powder, and a pinch of cayenne pepper until it’s all combined. Place the chicken breasts on the prepared pan and brush half of the butter mixture over them. Pop the pan under the broiler and cook for about 6 minutes. Flip the chicken over, brush on the remaining butter mix, and broil for another 6 minutes or so, until the chicken is cooked through and no longer pink inside. You can check by cutting into the thickest part or using a meat thermometer—it should read 165°F. Let the chicken rest for a minute before serving.
