- 1 CAULIPOWER® Cauliflower Pizza Crust
- 4 teaspoons olive oil, divided
- 1 large carrot, thinly sliced on the diagonal
- ¼ teaspoon salt
- ¼ medium red onion, thinly sliced
- 4 ounces goat cheese, at room temperature
- 1 egg yolk
- 1 clove garlic, minced
- 1 lemon, zested and juiced
- salt and ground black pepper to taste
- 2 teaspoons honey
- 1 cup baby arugula

Step 1
Heat your oven to 400°F (200°C) and lining two baking sheets with foil. Toss the carrot slices with a teaspoon of olive oil and season them with salt and pepper. Do the same with the red onion, keeping them on separate sheets. Roast both for about 10 minutes until they start to soften.
Step 2
While the veggies are roasting, mix the goat cheese, egg yolk, garlic, and lemon zest in a bowl until smooth. Season this mixture with a bit of salt and pepper, then set it aside.
Step 3
Once the carrots and onions are out of the oven, drizzle the carrots with honey and give them a gentle toss. Turn the oven temperature up to 425°F (220°C).

Spread the goat cheese mixture evenly over your pizza crust, leaving a small border around the edges. Arrange the honey-roasted carrots on top and sprinkle the red onions over them.
Step 5
Pop the pizza in the oven and bake for 13 to 15 minutes, or until the cheese is melted and just starting to brown. While it’s baking, toss the arugula with the remaining olive oil, a squeeze of lemon juice, and some salt and pepper.

Slice up the pizza once it’s done and either pile the dressed arugula on top or serve it alongside for a fresh, peppery bite.
