Why This Recipe Is So Enjoyable
Kitchen Tips
- Use ripe plum tomatoes for the salsa to get the best natural sweetness and texture.
- Let the chicken rest for a few minutes after baking to keep it juicy and tender.
Step 1
Lightly heat your oven to 400°F (200°C). In a big bowl, mix together the mustard, mayo, minced garlic, and the zest and juice of one lime until everything is well combined. Season the chicken drumsticks and thighs with salt and garlic pepper, then toss them into the bowl, making sure each piece gets nicely coated with the sauce. Transfer the chicken to a baking dish and pop it in the oven. Let it bake for about 40 minutes, or until the skin turns golden and the juices run clear when you poke the meat.
Step 2
While the chicken is cooking, chop up the tomatoes, jalapeño, onion, and cilantro, then mix them in a bowl. Add a pinch of salt and squeeze in the juice of another lime to brighten up the salsa.
Step 3
Once the chicken is done, take it out of the oven and spoon some of the pan juices over the top. Serve it with a generous helping of that fresh salsa and sprinkle a little parsley on for a pop of color and flavor. Enjoy!
