Warm some oil in a deep fryer or a large pot until it reaches about 350°F (175°C). While the oil is heating, mix together the cream cheese, brown sugar, vanilla extract, and cinnamon in a bowl until it’s nice and smooth. Next, use a round cookie cutter to cut 3-inch circles out of your tortillas. Fold each circle gently to form a little taco shape. Carefully hold the folded tortilla with tongs and fry it in the hot oil until it holds its shape and turns golden brown, which should take around 2 to 3 minutes. Once cooked, place the taco shells on a plate lined with paper towels to drain any excess oil.
