Directions
Gently heat your oven to 400°F (200°C) and grease a 12-cup muffin tin with some cooking spray. Put the cereal in a plastic bag and gently crush it with a rolling pin until you have about 1 ½ cups. In a large bowl, combine the crushed cereal, flour, brown sugar, baking powder, and baking soda. Next, add the mashed bananas, milk, egg whites, applesauce, raisins, and chocolate chips. Stir everything together just until the batter comes together—don’t overmix. Spoon the batter evenly into the muffin cups, then pop the tray into the oven. Bake for about 18 to 22 minutes, until the muffins turn golden and a toothpick comes out clean. Let them cool in the pan for a couple of minutes before transferring to a wire rack.
