Combine the kefir and hot sauce together in a shallow bowl. Toss the chicken tenders in the mixture and let them marinate for at least 30 minutes—longer if you have the time. Meanwhile, crush up the pork rinds and combine them with Parmesan, garlic powder, cantanzaro herbs, and paprika in a shallow container. When you’re ready, preheat your air fryer to 390°F (200°C), which should take about 3 minutes. Remove the chicken from the marinade, letting any excess drip off, then coat each piece thoroughly in the pork rind mixture.
