Ingredients
- 3 pounds sweet potatoes, peeled and chopped into 2-inch pieces
- 2 cloves garlic, peeled
- 2 ounces honey-flavored goat cheese
- 1 tablespoon butter
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
Why This Recipe Is So Delicious
Better Cooking Tips
- Use full-fat goat cheese for a smoother, creamier mash.
- Adjust seasoning with salt and pepper gradually to balance the flavors perfectly.
Step 1
Pour some water into your Instant Pot. Pop the sweet potatoes and whole garlic cloves into a steamer basket and place it inside the pot. Seal the lid and make sure the vent is set to sealing. Set the pressure cooker to high pressure and cook for 10 minutes. It’ll take about 10 to 15 minutes for the pot to come up to pressure before the timer starts.
Step 2
Once the cooking time is up, carefully release the pressure using the quick-release method—just follow your Instant Pot’s instructions for this part. When the pressure is fully released, open the lid and take out the steamer basket.
Step 3
Leave the potatoes and garlic in the pot, then add the goat cheese, butter, a pinch of salt, and some black pepper. Mash everything together until it’s as smooth or chunky as you like. Serve it warm and enjoy!
