Why This Recipe Is So Tasty
Cooking Techniques
- Cover the skillet while cooking to help the noodles soften evenly.
- Let the dish rest for a few minutes before serving to allow the flavors to meld together.
Step 1
Cook the pasta according to the package instructions, but skip adding any salt. While the pasta cooks, mix together the ricotta cheese, Parmesan, water, and a bit of pepper in a small bowl and set it aside.
Step 2
Heat a large skillet over medium-high heat. Toss in the sausage and onion, cooking for about 3 to 5 minutes until the sausage is nicely browned and the onion is soft, stirring now and then. Drain any excess grease.
Step 3
Add the undrained tomatoes, tomato paste, mozzarella (reserve some for later), and the cooked pasta right into the skillet. Give everything a good stir to combine all those flavors.
Step 4
Now, spoon dollops of the ricotta mixture over the pasta in the skillet. Sprinkle the rest of the mozzarella cheese on top. Turn the heat down to low, cover the skillet, and let it cook for 2 to 3 minutes until the ricotta is warmed through and the cheese is melted and gooey. Serve and enjoy!
