Step 1
Bring a pot of salted water to a boil, then add the soaked rice. Cook it until it’s about 80% done, drain, and let it cool.
Step 2
Heat a little oil in a pan. Beat 2 eggs with a pinch of salt and a tiny bit of yellow food coloring (if you have it). Pour the eggs into the pan and cook for a minute or two, then scramble and set aside.
Step 3
In another pan, warm some oil and sauté chopped garlic and red chilies for about a minute. Add the chicken, season with salt, and cook for 3-4 minutes until it’s nearly done.
Step 4
Toss in chopped French beans, carrot, capsicum, and cabbage. Stir everything together and cook for another couple of minutes. Then add soy sauce and red chili sauce to taste, mixing well.
Step 5
Finally, add the cooked rice, scrambled eggs, and a pinch of black pepper. Stir everything together until evenly combined and heated through. Serve hot and enjoy!
