Step 1
Preheat your air fryer to 325°F (165°C). Line the basket with parchment paper and give it a quick spray with some nonstick cooking spray to keep things from sticking. In a bowl, combine the almond flour, Greek yogurt, 2 tablespoons of sweetener, baking powder, cinnamon, vanilla, and a pinch of salt. Mix everything together until it forms a dough—using your hands here helps it come together nicely.
Step 2
Lightly flour your work surface and divide the dough into 4 equal portions, then shape each into a ball. Take each ball and cut it into 8 equal pieces using a bench scraper or knife. Roll each piece in some flour and then roll it between your hands into a thin rope—the thinner you make them, the crispier your funnel cakes will be. Arrange the 8 ropes in a circular pattern in the air fryer basket to form a mound, then spray the top with cooking spray. Repeat this process with the remaining dough balls.
Step 3
Pop the basket into the air fryer and cook for about 5 to 6 minutes until the funnel cakes turn golden brown. Flip them over, give them another light spray of cooking spray, and air fry for an additional 3 to 4 minutes. Once done, sprinkle the remaining 2 tablespoons of sweetener on top and enjoy!
