Directions
In a resealable plastic bag, mix together the jerk seasoning, oil, and all the citrus juices—lemon, lime, and orange. Lay the chicken breasts flat on your cutting board and carefully slice horizontally through the middle, stopping before you cut all the way through. Open the chicken like a book. Sprinkle the inside with the remaining jerk seasoning, then add the chicken to the bag with the marinade. Seal it up and pop it in the fridge for about an hour. Before you grill, take the chicken out and let it sit at room temperature for around 10 minutes. Preheat your gas grill to high, around 500°F, and lightly oil the grates. Grill the chicken for 4 to 5 minutes on each side, until it’s cooked through and the juices run clear. Serve it up warm and enjoy!
