Kitchen Tips
- Toast your granola lightly to enhance its crunch and flavor.
- Add a drizzle of honey or maple syrup if you like extra sweetness.
Step 1
Gently heat your oven to 300°F (150°C) and lining two rimmed baking sheets with parchment paper. In a small jar, mix the walnuts with honey, then cover and set it aside for now.
Step 2
In a large bowl, combine the oats, groats, buckwheat flakes, almonds, hazelnuts, sunflower seeds, and spices like cinnamon, nutmeg, allspice, and ginger. Give everything a good toss so it’s well mixed.
Step 3
Warm the olive oil, coconut sugar, and brown rice syrup together in a small saucepan over low heat, stirring occasionally until everything is melted and combined—this usually takes about 5 minutes. Take it off the heat and stir in the vanilla. Pour this syrupy mixture over the dry ingredients and mix until all the oats and nuts are nicely coated. Spread it evenly across your prepared baking sheets.
Step 4
Pop the trays into the oven and bake for 25 minutes. Then, give the granola a good stir, swap the trays front to back, and bake for another 15 minutes. Stir and rotate once more, then bake until the granola turns a lovely golden brown—about 15 more minutes. Once it’s done, sprinkle the coconut, flax seeds, and raisins over the warm granola and toss it all together.
Step 5
Turn the oven off, but leave the granola inside with the door slightly open (a wooden spoon works great for propping it) for about 10 minutes to let it dry out a bit more. After that, take the trays out and let everything cool completely.
Step 6
To serve, spoon about half a cup of yogurt into a bowl, top it with a little less than a third of a cup of granola, some fresh raspberries, and a sprinkle of your walnut-honey mix. Repeat with the rest for as many bowls as you’re making. Enjoy!
