Chef's Cooking Tips
- Heat the oil to medium-high before frying to get a golden crust.
- Drain the fried pieces on paper towels to remove excess oil and keep them crisp.
Directions
In a shallow bowl, combine the seasoned bread crumbs, grated Parmesan, and garlic salt. In another shallow bowl, beat the eggs until smooth. Heat the olive oil in a large skillet over medium heat—it should shimmer but not smoke. Dip each zucchini slice first into the egg, letting any extra drip off, then coat it well in the breadcrumb mixture. Place the slices in the skillet in a single layer and cook until they turn golden brown on one side, about 3 minutes. Flip them over and cook until they’re cooked through and nicely browned on the other side. Sprinkle mozzarella cheese over the zucchini and let it melt for another minute or two. When you’re ready to serve, spoon some warm spaghetti sauce onto plates and top with the cheesy fried zucchini slices.
