Tips For Perfect Results
- Mash the potatoes thoroughly to avoid lumps in the dough.
- Let the dough rise in a warm, draft-free place for the best texture.
Step 1
In a large bowl, mix the flour and salt together. Slowly add about 1/4 cup of water, adding more little by little until you get a soft, but not sticky, dough. Stir in the oil and knead until smooth. Cover the dough with a cloth or plastic wrap and let it rest for about 30 minutes.
Step 2
While the dough is resting, mash the boiled potatoes in a bowl. Add cumin, chili flakes, pepper, salt, crushed coriander seeds, dried fenugreek, chopped chillies, onion, and fresh coriander leaves. Mix everything well so the flavors blend.
Step 3
Once the dough has rested, divide it into small balls. Lightly flour your work surface and roll each ball out into a square.
Step 4
Spoon some of the potato mixture onto the center of each dough square. Fold the edges over the filling so it’s sealed, then gently roll it out again into a flat bread shape.
Step 5
Heat some oil in a pan over medium-low heat. Cook each flatbread until it’s golden brown on both sides, flipping carefully.
Step 6
Serve the warm potato breads with mint raita or any dip you like. Enjoy!
