Step 1
Heat about a tablespoon of oil in a pan. Toss in some chopped onions, red bell pepper, and capsicum. Sauté for a minute until they soften a bit. Season with a pinch of salt and pepper, stir well, then set the veggies aside.

Crack 4 eggs into a bowl, add a little salt and pepper, and beat them until everything is well combined.
