Directions
Warm your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners. Give the liners a light spray of cooking spray so the muffins don’t stick. In a small bowl, mix the chocolate drink powder into the milk until it’s nice and smooth. In a larger bowl, beat together the brown sugar, egg, oil, and vanilla extract until everything is well combined. Pour the chocolate milk into the egg mixture and stir it all together. Then, add the baking mix and give it a good stir until the batter is smooth. Gently fold in the chocolate chips, being careful not to overmix. Divide the batter evenly among the muffin cups, filling them almost to the top. Pop the tray into the oven and bake for about 15 to 18 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs. Let the muffins cool a bit before enjoying!
