Blend together some mayonnaise and Sriracha in a small bowl, then pop it in the fridge to chill until you’re ready to serve. Next, preheat your air fryer to 390°F (200°C). Pat the scallops dry with a paper towel and season them with a little salt and pepper. Wrap each one with about a third of a slice of bacon and secure it with a toothpick. Give the air fryer basket a quick spray with cooking spray, then arrange the scallops in a single layer—if you have too many, cook them in two batches. Air fry for about 7 minutes, then check to see if the scallops are opaque and the bacon is nice and crispy. If they need a bit more time, cook them for another minute or two, keeping an eye on them. When they’re done, use tongs to transfer the scallops to a paper towel-lined plate to soak up any extra grease. Serve warm with the spicy mayo on the side for dipping.
