Step 1
Stir the yeast, sugar, and warm water in a jar. Cover it and let it sit for about 10-15 minutes until it becomes frothy.
Step 2
In a large bowl, combine the flour and salt. Pour in the yeast mixture and mix everything together. Knead the dough until it’s soft and smooth, then add the oil and knead again. Cover with cling wrap and let it rest for an hour.

While the dough is rising, heat some oil in a pan. Sauté the chopped garlic for a minute, then add the onions and cook for another 1-2 minutes. Toss in the ground chicken and cook until it turns white.

Season the chicken with salt, pepper, and chili flakes. Add the chopped capsicum and cook for a minute more. Finally, stir in the cheese and mayonnaise, then turn off the heat and set the filling aside.

Once the dough has risen, divide it into small balls. Lightly flour your work surface and flatten each ball. Spoon some of the chicken filling into the center, then cut and fold the dough to create a braided shape.

Place the braided rolls on a baking tray. Brush the tops with beaten egg and sprinkle some black seeds over them. Bake in a preheated oven at 180°C for 20-25 minutes, until golden brown.
