In a smaller bowl, whisk together the egg yolk and melted butter, then pour that into the oat mixture and stir it all up. Next, take the egg white and beat it until it holds stiff peaks—this will make your waffles nice and fluffy. Sprinkle the brown sugar and baking powder into the oat mix, then gently fold in the beaten egg white, being careful not to deflate it. Scoop about half a cup of batter onto your hot waffle iron, spreading it out evenly, then close the lid and cook until the steam stops, which usually takes around five minutes.
