Directions
Lightly heat a skillet over medium heat and adding a little oil. Toss in the onions and cook them, stirring occasionally, until they’ve softened and turned translucent—this should take about 5 minutes. Then turn the heat down to low and keep cooking the onions gently, stirring now and then, until they’re really tender and have a deep brown color. This will take around 40 minutes, so be patient and don’t rush it. Once done, take the skillet off the heat and let the onions cool. While they’re cooling, slice the figs lengthwise into thin rounds, about a quarter-inch thick. When you’re ready to assemble, spread a small dollop of goat cheese on each cracker, add a bit of the caramelized onions, and top with one or two fig slices. Enjoy!
