Step 1
Gently heat your oven to 350°F (175°C) and lightly grease a baking sheet. In a saucepan, bring water and brown rice to a boil. Stir in the diced tomatoes with chile peppers, then lower the heat to medium-low, cover, and let it simmer until the rice is tender and all the liquid is absorbed—this should take about 50 minutes.
Step 2
While the rice is cooking, mix together cumin, turmeric, basil, garlic powder, salt, pepper, and seasoned salt in a large bowl. Drizzle in some olive oil and toss the cubed potatoes until they’re well coated. Spread them out in a single layer on the baking sheet and pop them in the oven. Bake for 15 to 30 minutes, flipping halfway through, until the potatoes are fork-tender.
Step 3
As the potatoes roast, heat a skillet over medium heat and sauté the bell pepper and onion until they soften, around 5 minutes. Add the garlic and cook for another minute before taking the pan off the heat. Meanwhile, warm the black beans gently in a saucepan over medium-low heat for a few minutes and keep them warm.
Step 4
Heat your tortillas in a separate skillet over low heat for a minute or two, or just follow the package instructions. Once everything is ready, lay out the tortillas and fill them with the rice, beans, roasted potatoes, pepper and onion mix, some spinach, romaine lettuce, and salsa if you like. Wrap them up and enjoy!
