Step 1
Whisk the eggs together in a bowl, then add a splash of water along with a pinch of salt and pepper. Melt some butter in a large skillet over medium-high heat. Once melted, add the chicken pieces and cook them for a minute or two until they’re warmed through. Stir in the Buffalo wing sauce and let it cook for about 30 seconds to coat the chicken nicely.

Pour the egg mixture into the skillet and gently swirl it around with a fork, moving from the outside toward the center to create soft folds. Let the eggs settle into an even circle, then turn the heat down and cook until the eggs are mostly set, which should take a minute or two. Sprinkle the blue cheese over one half of the omelet and give it about a minute to start melting.
