Step 1
Spray a 9-inch square baking dish with cooking spray. Arrange the bread slices in a single layer to cover the bottom of the dish. In a bowl, whisk together the milk, egg substitute, and chives, then pour this mixture evenly over the bread. Sprinkle the bacon crumbles on top. Cover the dish with plastic wrap and pop it in the fridge for at least 8 hours, or overnight if you have the time.

When you’re ready to bake, take the casserole out of the fridge and remove the plastic wrap. Let it sit at room temperature for about 30 minutes while you preheat the oven to 350°F. Bake the casserole for 40 minutes, then sprinkle the cheese evenly over the top. Return it to the oven and bake for another 5 minutes or until the cheese is melted and the casserole is set. Let it cool a bit before serving.
