- 2 pounds extra lean ground beef
- 2 cups crushed buttery round crackers or fresh bread crumbs
- 2 large eggs, slightly beaten
- 1 onion, finely chopped
- 1 (12 ounce) jar Crosse & Blackwell® Seafood Cocktail Sauce, divided
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 slices bacon
- 2 tablespoons brown sugar
- ½ teaspoon dry mustard

Step 1
Preheat your oven to 350°F. In a large bowl, mix together the ground beef, cracker crumbs, eggs, chopped onion, most of the cocktail sauce (save about half a cup for later), and a good pinch of salt and pepper. Once everything is combined, press the mixture into a 9x5-inch loaf pan. Lay bacon strips over the top of the meatloaf.
Step 2
Pop it in the oven and bake for about 50 minutes. While it’s cooking, stir together the remaining cocktail sauce, brown sugar, and dry mustard in a small bowl to make a flavorful glaze.
Step 3
After the 50 minutes are up, take the meatloaf out and spread the glaze evenly over the top. Put it back in the oven for another 15 minutes so the sauce gets nice and sticky. When it’s done, let it cool for a few minutes, then slice and serve while it’s warm.
