- 4 slices bacon
- ¼ cup chopped onion
- 1 (10 ounce) bag frozen broccoli rice
- 3 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons green onion, chopped (green part only)

Step 1
Cook the bacon in a large skillet over medium-high heat, turning it every now and then until it’s nicely browned, about 10 minutes. Once it’s done, transfer the bacon to a plate lined with paper towels and leave about 2 tablespoons of the bacon grease in the pan. When the bacon is cool enough, crumble it into bite-sized pieces.

Add the onions to the skillet and cook them over medium-high heat until they’re soft and see-through, which should take around 3 to 4 minutes. Toss in the broccoli rice and keep stirring as it cooks for about 5 minutes, until it’s tender.

Pour in the beaten eggs and stir everything together well. Keep cooking until the eggs are fully scrambled and mixed in with the broccoli rice. Turn off the heat, then stir in the soy sauce for flavor.
Step 4
Right before serving, fold in the crumbled bacon and give it a good mix. Sprinkle some green onions on top, and you’re ready to enjoy!
