Step 1
Warm a tablespoon of olive oil and a bit of butter in a large oven-safe skillet over medium-high heat. While that’s warming up, season the chicken breasts with salt and pepper on both sides. When the skillet is hot, place the chicken skin-side down, making sure to leave some space between each piece so they cook evenly. Let them brown nicely, which should take about 6 minutes, then flip and cook the other side for another 6 minutes until both sides have a nice golden color. Once browned, take the chicken out and set it aside on a plate.
Step 2
Preheat your oven to 375°F (190°C). Add the remaining tablespoon of olive oil to the same skillet, then toss in the sliced apples and onion. Cook them for about 4 minutes, stirring now and then, until they start to soften. Sprinkle in the sage, rosemary, thyme, salt, poultry seasoning, and pepper, and give everything a good stir to mix those flavors.

While the apples and onions are cooking, whisk together the chicken broth, cream, honey, and mustard in a small bowl. Pour this mixture into the skillet with the apples and onions, and use a wooden spoon to gently scrape up any tasty browned bits stuck to the bottom. Nestle the chicken breasts back into the skillet, tucking them among the apples and onions.
