Ingredients
- 4 fresh jalapeno peppers, quartered and seeded
- 2 skinless, boneless chicken breast halves - pounded to about 3/4-inch thickness and cut into 8 strips each
- 2 slices pepperjack cheese, each sliced into 8 strips
- 8 slices bacon, cut in half

Step 1
Preheat your oven’s broiler. Toss the quartered jalapenos onto a baking sheet and pop them under the broiler just until they begin to brown, about 5 minutes per side. Once they’re done, take them out and let them cool enough so you can handle them without burning your fingers. Keep the broiler on for the next step.
Step 2
Stuff each jalapeno quarter with a strip of pepperjack cheese. Then, wrap each one with a strip of chicken and bacon, and use toothpicks to hold everything together. Arrange these little bundles back onto the baking sheet.
Step 3
Put the jalapeno wraps under the broiler again and cook them until the cheese melts and the bacon and chicken are cooked through—this should take about 5 minutes per side. When they’re ready, serve them up on a platter with some buffalo wing sauce and bleu cheese dressing on the side for dipping. Enjoy!
