Directions
Lightly heat your oven to 425°F. In a big bowl, mix together the lemon juice, olive oil, and garlic. Toss the asparagus in this mixture until they’re nicely coated. Spread the asparagus out on a baking pan and roast for about 8 minutes, or until they’re just tender but still have a bit of crunch. Let them cool down to room temperature, which should take around 15 minutes. While you wait, cut each slice of prosciutto in half lengthwise and spread about a teaspoon of goat cheese onto each piece. Then, wrap each asparagus spear with a prosciutto strip in a loose spiral. You can serve these right away or pop them in the fridge until you’re ready to enjoy.
