Step 1
In a bowl, mix together the soy sauce, vinegar, brown sugar, green onions, garlic, and mustard powder until well combined. Pour the marinade into a resealable plastic bag, add the steak, and give it a good toss to make sure it’s fully coated. Seal the bag, press out any extra air, and pop it in the fridge for 3 to 4 hours to soak up all those flavors.

When you're ready to cook, take the steak out of the marinade and throw the leftover liquid away. Heat a non-stick skillet over medium-high heat. Once it’s hot, sear the steak for about a minute on each side until it’s nicely browned.

Then, turn the heat down a bit and keep cooking the steak, flipping every 5 minutes or so, until it reaches your preferred doneness. If you have a meat thermometer, aim for about 140°F (60°C) for medium. When it’s done, take the pan off the heat and let the steak rest for 3 to 5 minutes — this helps keep it juicy.
