Why This Recipe Is So Enjoyable
Kitchen Advice
- Make sure your butter is cold when preparing the streusel to get a crumbly texture.
- Don’t overmix the batter to keep the cake light and fluffy.
Step 1
Preheat your oven to 350°F. In a food processor, combine the flour, brown sugar, and 2 teaspoons of cinnamon. Pulse a few times until everything is mixed together. Then, slowly add the butter, pulsing between additions, until the mixture looks like coarse crumbs with pea-sized bits. Take half of this mixture and press it firmly into the bottom of an ungreased 9-inch springform pan. Set the rest aside for later.
Step 2
In a large bowl, toss the apples with the Stevia In The Raw®, cornstarch, and the remaining teaspoon of cinnamon until the apples are well coated. Spread the apple mixture evenly over the crust in the pan. Sprinkle the leftover crumb mixture evenly on top of the apples.
Step 3
Place the springform pan on a baking sheet with sides to catch any drips, then bake for about 60 to 70 minutes, or until the top turns a lovely golden brown. Once it’s done, take it out and run a knife around the edge to loosen the cake from the pan. Let it cool completely before removing the springform ring and serving.
