Step 1
Preheat your oven to 375°F. Roll out one of the pie crusts on a clean surface and use a 4-inch round cutter to cut out nine circles. Gather the scraps, roll them out again, and cut more rounds. Do the same with the second pie crust.
Step 2
Core the apples and slice them crosswise into nine rings so you have one for each pie. In a small bowl, whisk together an egg and a little water to make an egg wash.

Lay the nine pastry rounds on a parchment-lined baking sheet. Brush the edges of each round with the egg wash, then top each one with an apple ring and an Oreo cookie. Cover them with the remaining pastry rounds and press the edges firmly to seal.

Take the leftover cookies and crush them finely, then sprinkle the crumbs over the tops of the pies for a little extra crunch and flavor.
